Spiced Chickpea Bowl (High-Protein)

A high-protein Indian-spiced chickpea bowl built on turmeric-cumin chickpeas simmered in tomato and ginger-garlic, layered over basmati rice with wilted spinach and a scoop of cottage cheese for extra protein. Finished with cilantro and lemon, it delivers a warming, tangy, earthy plate without meat.

Instructions

1
Prep Measure out the chickpeas, onion, ginger-garlic paste, tomatoes and all spices so everything is ready by the stove.
2
Heat olive oil in a small saucepan over medium heat. Cook the onion 4 to 5 minutes, stirring often, until soft and golden at the edges.
3
Stir in the ginger-garlic paste, turmeric, cumin, garam masala and chili powder. Cook over medium-low heat 1 minute until the raw spice smell fades and oil separates at the edges.
4
Add the crushed tomatoes and chickpeas to the pan, season with salt, and simmer over medium-low heat 10 minutes until the sauce thickens and clings to the chickpeas.
5
Fold the baby spinach into the pan and cook over medium heat 2 minutes until just wilted and bright green. Spoon the warm basmati rice into a bowl, top with the chickpea and spinach mixture, and add a scoop of cottage cheese alongside.
6
Plate Scatter the cilantro over the bowl and set the lemon wedge on the rim for squeezing just before eating.
