Instructions

1
Prep Cut chicken thigh and paneer into 1.5-inch and 1-inch cubes respectively; pat chicken dry with paper towel.
2
Marinate Mix yogurt, ginger-garlic paste, garam masala, cumin, chili powder, turmeric, lemon juice, and salt; fold in chicken until coated.
3
Rest Cover bowl and chill 45 minutes until chicken is fully marinated.
4
Grill Thread marinated chicken and paneer cubes alternately onto a metal skewer; brush with oil and grill over medium-high heat 10–12 minutes, turning every 3 minutes, until charred and no longer pink inside.
5
Rest Let skewer rest 3 minutes on a plate so juices settle into meat.
6
Finish Toss cooked chickpeas and diced cucumber with a pinch of salt; stir mint into the second yogurt portion.
7
Finish Top the chickpea salad with thinly sliced onion and chopped cilantro.
8
Plate Slide chicken and paneer onto a plate alongside the salad, add yogurt and lemon wedge on the side.
