Smoked Beef Short Ribs (High-Protein)
Beef short ribs rubbed with salt, pepper, paprika, and garlic, then smoked low over hardwood until the collagen renders and the bark sets. Lean beef sirloin joins them to lift the protein without altering the barbecue concept. Served with black beans and a squeeze of lime.

Instructions
1
Prep
Pat the ribs and sirloin dry, then mix black pepper, paprika, smoked paprika, salt, and minced garlic into a rub coating every surface.
2
Rest
Leave the rubbed meat uncovered on a rack for 30 minutes until tacky.
3
Roast
Set a smoker to 250F with hardwood and place the ribs bone-side down for about 5 hours until a dark bark forms and a probe slides through.
4
Sear
Oil the sirloin and add it to the smoker for the final hour at 250F, pulling it once the internal temperature reaches 130F and the surface firms.
5
Plate
Warm the black beans over medium heat 5 minutes until steaming, slice the sirloin against the grain beside the ribs, and squeeze lime over.
