Instructions
1
Prep
Boil potatoes in salted water 12-15 minutes until knife-tender. Sauté diced onion in oil over medium heat 4-5 minutes until translucent.
2
Add beef mince to onion with soy sauce, sugar, salt, and pepper; cook 5-6 minutes over medium heat, breaking up meat, until no pink remains and dry.
3
Drain potatoes and mash until smooth with small lumps. Fold beef mixture and diced hard-boiled egg through mashed potato until evenly combined.
4
Chill mixture 10 minutes until firm enough to shape into three 1-inch-thick oval patties with damp hands.
5
Coat patties in flour, dip in beaten raw egg mixed with milk, and press into panko breadcrumbs until fully covered on all sides.
6
Shallow-fry croquettes in vegetable oil over medium heat 3-4 minutes per side until deep golden and crisp. Drain briefly on paper towel.
7
Plate croquettes alongside shredded cabbage and tonkatsu sauce for dipping.
