Instructions

1
Prep Pound beef sirloin slices thin between plastic wrap. Mix with egg white, 1 tbsp fish sauce, sugar, minced garlic, and mashed cannellini beans until evenly coated.
2
Marinate Cover and chill 30 minutes until beef absorbs seasoning and beans bind the mixture.
3
Fry Heat oil to 350°F (175°C) in a small pot over medium-high heat. Fry beef mixture in two batches as thin clusters for 3 to 4 minutes per batch until deep golden brown and crisp.
4
Drain Transfer fried beef to a paper towel-lined plate and rest 2 minutes until excess oil drains and crust sets.
5
Reduce Combine remaining 1 tbsp fish sauce, lime juice, palm sugar, fresh Thai chili and dried chili flakes in a small saucepan over medium-low heat. Simmer 2 to 3 minutes until sugar dissolves and sauce thickens to a glaze.
6
Toss Add crispy beef to the saucepan and toss 30 seconds to coat evenly in warm glaze until every piece glistens.
7
Plate Pile glazed crispy beef onto a plate, scatter with crushed peanuts and chopped cilantro, serve with lime wedge.
