Instructions
1
Prep
Cut chicken into bite-size pieces. Pat tofu dry and cube if using, or omit. Mince garlic and ginger. Slice celery on diagonal and cut bell pepper into chunks.
2
Marinate
Toss chicken with 1 tbsp soy sauce and 1 tsp cornstarch; let sit at room temperature for 10 minutes while prepping vegetables.
3
Sear
Heat 1.5 tbsp peanut oil in a wok over high heat until shimmering. Sear chicken 2–3 minutes, stirring, until opaque and lightly browned; transfer to a plate.
4
Build
Add garlic and ginger to the wok, sauté 30 seconds until fragrant. Add bell pepper and celery, stir-fry 2 minutes until tender-crisp. Return chicken with scallions and cashews. Whisk together 2 tbsp soy sauce, oyster sauce, rice vinegar, sugar, stock, and 1 tsp cornstarch; pour into wok and toss 1–2 minutes until glossy.
5
Plate
Drizzle sesame oil over stir-fry and plate immediately over steamed rice.
