Bistro Burger with Fried Egg (High-Protein)
A beef patty seared in a skillet, topped with melted Emmental, crisp bacon, a fried egg and a cottage cheese-mustard spread, served open on a toasted brioche bun. The fried egg and extra cottage cheese boost protein well past a standard bistro burger.

Instructions
1
Prep
Season the beef patty with salt and pepper. Lay bacon flat on a cutting board ready for cooking.
2
Crisp the bacon in a skillet over medium heat for 3-4 minutes per side until deep brown and crisp, then remove and drain.
3
Sear the beef patty in the same skillet over medium-high heat for 3 minutes per side until a dark crust forms, topping with cheese to melt.
4
Fry the egg in a small nonstick pan over medium-low heat for 2-3 minutes until the white is set but yolk jiggles.
5
Whisk together the cottage cheese and Dijon mustard in a small bowl until combined and loosened.
6
Toast the split brioche bun cut-side down in the skillet fat over medium heat for 1 minute until golden.
7
Spread the cottage cheese mixture on both bun halves, layer lettuce, tomato, onion, patty, bacon and egg, then serve open-faced.
8
Plate
Rest the assembled burger for 2 minutes before serving immediately.
