Instructions
1
Rub cold cubed butter into sifted flour and sugar until the mix resembles coarse breadcrumbs, then bind with the egg yolk and iced water into a shaggy dough.
2
Press the dough into a disc, wrap, and chill for 20 minutes before dividing in two and lining the 2 x 8cm individual tart tins; prick the bases and chill a further 10 minutes.
3
Blind bake the tart shells at 180C for 12 minutes with baking beans, then remove the beans and bake a further 5 minutes until pale gold; cool on a wire rack.
4
Whisk the condensed milk, egg, 30g heavy cream, cooled espresso, dissolved coffee powder and vanilla extract together until smooth and fully combined.
5
Pour the coffee custard into the baked tart shells and bake at 160C for 16-18 minutes until just set with a gentle wobble in the centre.
6
Cool the tarts to room temperature on the wire rack, then chill for at least 1 hour until fully set.
7
Just before serving, top each tart with a small dollop of softly whipped cream.
