Vegetable Vermicelli Bowl with Fresh Herbs

Rice vermicelli noodles are topped with quick-pickled carrot and daikon, cucumber, crisp lettuce, fresh herbs, and crushed peanuts, then finished with a tangy nuoc cham style dressing made without fish sauce. Cool, crunchy, and herb-forward, the bowl is served at room temperature with lime wedges and chili on the side.
