Instructions
1
Steam 100g sweet potato (peeled, cubed) for 15 minutes until very soft, then mash 80g of it smooth and set aside; thinly slice and steam the remaining 20g separately for the topping.
2
Preheat the oven to 160°C (320°F) and line the base of a 10cm springform tin with parchment.
3
Beat the softened cream cheese and sugar together until completely smooth with no lumps.
4
Beat in the mashed sweet potato until fully combined, then add the egg and mix on low speed just until incorporated.
5
Stir in the heavy cream, cornstarch, lemon juice and vanilla extract until the batter is silky and lump-free.
6
Pour the batter into the prepared tin and tap gently on the counter to release air bubbles.
7
Arrange the thin steamed sweet potato slices decoratively over the top of the batter.
8
Bake for 32-36 minutes until the edges are set and the centre still has a slight wobble.
9
Turn off the oven, crack the door open and let the cheesecake cool inside for 10 minutes to prevent cracking.
10
Remove to a wire rack to cool fully to room temperature, then chill in the fridge for at least 4 hours before slicing.
