Instructions
1
Preheat the oven to 170°C (340°F) and line a 10x10cm square tin with baking paper, leaving an overhang on two sides.
2
Toast the sesame seeds in a dry pan over medium heat for 1-2 minutes until fragrant, then set aside.
3
In a saucepan, melt the butter with the brown sugar and golden syrup over low heat, stirring until the sugar dissolves, then remove from heat and cool for 2 minutes.
4
Whisk in the beaten egg, vanilla extract and melted coconut oil until the mixture is smooth and glossy.
5
Fold in the sifted flour and salt until just combined, then stir through the chopped peanuts and half the toasted sesame seeds.
6
Pour the batter into the prepared tin, spreading it evenly to the corners with a spatula.
7
Scatter the crushed peanuts and remaining sesame seeds over the top, pressing lightly so they adhere.
8
Bake for 20-22 minutes until the edges are deep golden and set but the centre still looks slightly soft.
9
Cool completely in the tin on a wire rack for at least 30 minutes before lifting out using the paper overhang.
10
Slice into 2 squares with a sharp knife, wiping the blade between cuts for a clean edge.
