Sesame Paste Candy
A dense, fudge-like Middle Eastern sweet built from tahini and a soft-ball sugar syrup, finished with a scatter of toasted sesame seeds for crunch against the smooth, nutty paste beneath. This is halva's close cousin but set firmer and cut into neat candy pieces rather than crumbled.

Instructions
1
Line a small 10x10cm tin or tray with parchment and set aside.
2
In a small heavy saucepan, combine the sugar, honey and a splash of water (about 15g) and set over medium heat.
3
Clip on a thermometer and boil the syrup without stirring until it reaches 118-120°C (soft-ball stage), swirling the pan occasionally, about 5-6 minutes.
4
Remove from heat and immediately stir in the tahini and salt vigorously with a wooden spoon until the mixture turns pale, thick and glossy, about 30 seconds.
5
Pour the hot candy into the lined tin and spread to an even layer roughly 1cm thick using the back of the spoon.
6
Scatter the toasted sesame seeds over the top and press gently so they adhere.
7
Let cool at room temperature for 10 minutes, then transfer to the fridge to firm up fully.
8
Lift out using the parchment, cut into 4 equal pieces with a sharp warm knife, and serve.
