Pistachio Rose Ice

A pale rose-pink granita built from a pistachio-steeped sugar syrup, brightened with lemon juice and tinted with a whisper of rose colouring, then hand-scraped into loose, delicate ice crystals. Finished with chopped pistachio for crunch, it is a refreshing, low-fat frozen treat rooted in Middle Eastern sherbet and rosewater dessert traditions.

Instructions

1
In a small saucepan combine the water and sugar and warm gently over low heat, stirring until the sugar fully dissolves; do not let it boil hard, just reach a clear syrup, about 3 minutes.
2
Remove from the heat and stir in the ground pistachio, letting it steep in the warm syrup for 10 minutes to release its flavour and colour the liquid pale green.
3
Strain the syrup through a fine sieve into a bowl, pressing on the pistachio solids to extract as much liquid as possible, then discard the spent nut meal.
4
Stir in the lemon juice and a single drop of rose-pink food colouring until the syrup turns a soft blush colour, then taste and add another drop of colouring if a deeper rose shade is wanted.
5
Pour the mixture into a shallow freezer-safe tray so it sits no more than 2cm deep, then place in the freezer uncovered for 45 minutes.
6
After 45 minutes, drag a fork through the half-set mixture to break up the forming ice crystals, scraping from the edges into the centre.
7
Return to the freezer and repeat the forking/scraping every 30 minutes for a further 2 hours, until the whole tray is made up of loose, fluffy, pale pink ice crystals.
8
Scoop into two chilled glasses, scatter the chopped pistachio garnish over the top, and serve immediately while still icy and granular.
