Honey Walnut Fried Dough
A Middle Eastern-leaning take on fried dough, lightly spiced with cardamom and finished the way baklava is finished: a warm honey drizzle and a scatter of chopped walnuts over a crisp, pillowy fried ring.

Instructions
1
Warm the milk to lukewarm and stir in the yeast and a pinch of the sugar; let sit 10 minutes until foamy.
2
In a bowl combine flour, remaining sugar, salt and cardamom, then mix in the beaten egg and the yeast mixture to form a soft, slightly sticky dough.
3
Knead on a floured surface for 5 minutes until smooth and elastic, then cover and leave to rise in a warm spot for 45 minutes until doubled.
4
Punch down the dough, divide into two pieces, and shape each into a small flattened disc with a hole in the centre, about 6cm across.
5
Cover the shaped rings and let rest a second time for 15 minutes.
6
Heat the vegetable oil in a deep pan to 175°C using a thermometer to monitor temperature.
7
Fry the dough rings for about 90 seconds per side until deep golden brown, turning once, then lift out and drain on a wire rack.
8
While still warm, drizzle the warmed honey generously over both donuts.
9
Scatter the finely chopped walnuts over the honey-glazed donuts and serve immediately.
