Grilled Whole Sardines

Whole sardines cleaned, slashed, and grilled over high heat until skin blisters and chars. Seasoned with olive oil, garlic, lemon, and sumac, then finished with fresh parsley. Served with lemon wedges and flatbread, this coastal Middle Eastern staple showcases smoky char and bright citrus acidity.

Instructions

1
Prep Rinse sardines and pat dry. Slash two shallow cuts on each side with a sharp knife to help seasoning penetrate and skin crisp.
2
Marinate Rub sardines all over with olive oil, minced garlic, sumac, salt and pepper. Slice half the lemon into thin rounds, tuck into cavities. Rest 15 minutes.
3
Grill Place sardines on preheated grate over high heat for 3 to 4 minutes per side until skin blisters, chars lightly, and flesh flakes easily from bone.
4
Plate Transfer to plate, scatter chopped parsley on top, and serve with lemon wedge and warm pita.
