Instructions

1
Prep Peel and cube the potato, then place it in a small saucepan and cover with cold water; season with salt.
2
Boil Bring the saucepan to a boil over high heat and cook the potato for 12 to 15 minutes until a knife slides through with no resistance.
3
Sauté While potato cooks, heat 1 teaspoon oil in a small skillet over medium heat and cook the onion and carrot for 4 to 5 minutes until translucent and soft.
4
Chill Drain the potato and mash until smooth. Fold in sautéed onion, carrot, peas, grated cheddar, salt and pepper; spread on a plate and refrigerate 15 minutes.
5
Shape Divide the chilled mixture into two portions and form each into an oval patty about 1 inch thick.
6
Dredge Coat each patty in flour, then beaten egg, then panko breadcrumbs, pressing gently so crumbs adhere to the whole surface.
7
Fry Heat 1 1/4 cups oil to 350°F in a small deep pot and fry the croquettes for 3 to 4 minutes, turning once, until deep golden brown.
8
Drain Lift the croquettes onto paper towels and let drain for 1 minute to remove excess oil.
9
Plate Set the croquettes beside the shredded cabbage and serve with ketchup mixed with worcestershire sauce.
