Instructions
1
Prep
Finely dice the onion and mince the garlic cloves. Combine ground lamb, diced onion, minced garlic, cumin, allspice, cinnamon, chopped parsley, and 1/4 tsp salt in a bowl, mixing until evenly distributed.
2
Knead
In a second bowl, stir flour, water, and 1/8 tsp salt together, then knead on a counter for 3 minutes until smooth and no longer tacky.
3
Rest
Cover the dough with a bowl and let sit at room temperature for 20 minutes.
4
Build
Roll dough to 1/16 inch thickness on a floured counter, cut into four 4-inch rounds, spoon filling onto each round, fold into half-moons, and pinch edges firmly to seal.
5
Fry
Heat olive oil in a nonstick skillet over medium heat. Fry dumplings for 3 to 4 minutes per side until golden brown and crisp.
6
Plate
Arrange dumplings on a plate, whisk yogurt, tahini, grated garlic, and lemon juice together, spoon dip alongside, and scatter with chopped parsley.
