Fig and Honey Tart

A Greek-inspired tart pairing a crisp, buttery pastry shell with a honeyed mascarpone and Greek yogurt filling, topped with fresh fig wedges, a warm honey glaze and chopped walnuts. The combination leans on classic Greek pantry staples — honey, yogurt and walnuts — echoing flavours found in baklava and other honey-soaked sweets, but presented in a lighter, fruit-forward tart format.

Instructions

1
Rub chilled cubed butter into the sifted flour and sugar until the mixture resembles coarse breadcrumbs.
2
Mix in the egg yolk and iced water a little at a time until the dough just comes together; shape into a disc, wrap and chill for 30 minutes.
3
Roll the dough out thinly and line two 8cm individual tart tins, pressing into the corners and trimming the edges; prick the bases with a fork and chill for 10 minutes.
4
Blind bake the tart shells at 180°C (350°F) for 12 minutes with baking beans, then remove the beans and bake a further 5 minutes until pale gold; cool on a wire rack.
5
Beat the mascarpone, Greek yogurt, 22g honey and cinnamon together until smooth and spread evenly into the cooled tart shells.
6
Arrange the sliced fresh figs over the mascarpone filling in overlapping wedges.
7
Warm the remaining honey gently and brush over the figs to glaze.
8
Scatter the chopped walnuts over the top and serve immediately.
