Instructions
1
Prep
Stir together semolina, plain yogurt and water until a thick, scoopable batter forms with no dry lumps visible.
2
Chill
Cover and set aside at room temperature for 20 minutes so the semolina swells and the batter thickens.
3
Build
Fold in onion, curry leaf, green chile, ginger, mustard seeds, cilantro, baking soda and salt until evenly distributed and the mixture holds its shape on a spoon.
4
Fry
Heat vegetable oil in a small frying pan over medium heat until a pinch of batter sizzles immediately; drop in tablespoon-sized portions, working in batches, and cook for 4–5 minutes per side over medium heat, turning once, until the crust is deep golden-brown.
5
Drain
Lift fritters onto a paper-towel-lined plate and rest for 1 minute so the crust stays crisp.
6
Plate
Arrange the fritters on a small plate and serve hot alongside coconut chutney.
