Almond Crumble Bars

A rustic Italian-style crumble bar built from a buttery almond-flecked shortcrust base, studded with diced fresh apricot and finished with a craggy, golden crumble top. The texture contrasts a firm, biscuity base against loose, sandy crumble and soft pockets of fruit, echoing the pastries found in northern Italian bakeries alongside crostata and sbrisolona.

Instructions

1
Preheat the oven to 175°C (350°F) and line a 10x10cm square tin with baking parchment, leaving an overhang on two sides.
2
In a bowl, whisk the melted butter and sugar together until glossy, then beat in the egg yolk and vanilla extract.
3
Sift the all-purpose flour, almond flour, baking powder and salt into the wet mixture and stir just until a soft, slightly crumbly dough forms.
4
Fold through half the chopped almonds and the diced apricot, keeping the mixture loose rather than compacted.
5
Press two-thirds of the dough firmly and evenly into the base of the tin using the back of a spoon.
6
Crumble the remaining dough over the base in loose, uneven pieces to create the signature crumble texture, then scatter the remaining chopped almonds on top.
7
Bake for 22-25 minutes until the top is golden and the edges have pulled slightly away from the tin sides.
8
Cool in the tin on a wire rack for at least 20 minutes before lifting out by the parchment overhang and slicing into 2 squares.
