Instructions
1
Prep
Drain the soaked salt cod, rinse under cold water, and flake into small pieces, checking for and removing any stray bones or skin.
2
Boil
Simmer the potato in water over medium heat for 15 minutes until tender, then drain and mash smooth.
3
Build
Whisk the egg, then fold in the mashed potato, flaked cod, flour, garlic, parsley, baking powder, and black pepper until a thick batter forms.
4
Chill
Cover the bowl and rest the batter in the refrigerator for 30 minutes until it firms up enough to hold its shape.
5
Fry
Heat the vegetable oil in a deep pot over medium-high heat to 350°F, then drop tablespoon-sized scoops of batter into the oil in batches, frying 3–4 minutes until deep golden and crisp.
6
Plate
Lift the fritters onto a paper-towel-lined plate to drain, then arrange on a serving plate with the lemon wedge and garlic aioli alongside.
