Prep Cube Spam into 1cm pieces. Crumble cold rice with fingers to separate grains. Grate carrot, thinly slice scallion, mince garlic, grate ginger. Whisk 2 eggs with white pepper. Mix mayonnaise, rice vinegar, carrot, and salt for mac salad.

Boil Cook macaroni in salted water over high heat 8–9 minutes until tender. Drain, rinse under cold water. Toss with prepared mayo mixture. Set aside.

Sear Heat 2 tbsp neutral oil in a large heavy skillet over medium-high 2 minutes. Add Spam in single layer (work in two batches if needed), sear 4 minutes turning once until both faces turn deep mahogany. Transfer to a plate.

Build 1 Pour whisked eggs into the Spam pan, scramble over medium-high heat 90 seconds until just set. Lift to the Spam plate.

Saute Heat sesame oil in the same pan over medium-high 30 seconds. Add garlic and ginger, cook 30 seconds. Add rice, break apart with spatula 3–4 minutes until grains separate and toast slightly. Pour in soy and oyster sauce, toss 60 seconds. Return Spam and scrambled eggs, add half scallion, toss 30 seconds.

Fry Melt butter in a separate skillet over medium-low 30 seconds. Crack remaining 2 eggs in, fry 3–4 minutes until whites set and yolks stay jammy.

Plate Divide fried rice between two plates, top each with a fried egg, drizzle remaining soy sauce over eggs, scatter remaining scallion, set macaroni salad alongside.
