Prep Heat oven to 150C/300F. Score the pork fat. Rub all over with sea salt and liquid smoke, then wrap tightly in foil.

Roast Roast over low heat at 150C/300F for 3.5 hours until the pork pulls apart easily and shreds with a fork.

Steam Rinse rice and cook in a covered pan over low heat 15 minutes until fluffy and all the water has absorbed.

Saute Cook the cabbage in the warm pork drippings over medium heat 6 minutes until silky, glossy, and just tender.

Plate Shred the pork into bite-size pieces and moisten with its salty juices. Pile over the warm rice with the braised cabbage alongside.
