Instructions
1
Prep
Pat shrimp dry on paper towels, then pulse in a food processor with pork belly, minced garlic, minced shallot, fish sauce, sugar, salt, pepper and cornstarch until a sticky paste forms.
2
Chill
Cover and refrigerate the paste for 20 minutes until firm enough to hold its shape on the sugarcane.
3
Build
Oil your hands, mold about one quarter of the paste firmly around each sugarcane piece into a smooth 3-inch oval log with no visible cracks.
4
Grill
Brush oil onto the shrimp-coated skewers and grill over medium-high charcoal heat, turning every 2 minutes for 8 to 10 minutes until golden brown and lightly charred.
5
Plate
Whisk hoisin, peanut butter and water until smooth, scatter crushed peanuts over top, and serve with sugarcane skewer, lettuce, herbs, rice paper and dipping sauce alongside.
