Instructions
1
Prep
Mix the ground short rib and sirloin blend with gochujang, sesame oil, chopped scallion, minced garlic and soy sauce; shape into a single patty about 3/4 inch thick.
2
Chill
Rest the patty on a plate in the fridge for 10 minutes.
3
Grill
Cook the patty over medium-high heat for 3–4 minutes per side until deeply browned and the centre reaches 160°F; add cheese in the last minute.
4
Fry
Heat vegetable oil over medium heat and fry the egg 2–3 minutes until the white sets and the yolk edges firm, keeping the centre runny.
5
Toast
Place the bun halves cut-side down in the same pan over medium heat for 1 minute until golden.
6
Build
Spread both toasted bun halves with mayonnaise mixed with 1/2 tsp gochujang; layer lettuce and cucumber quick-pickled in rice vinegar and sugar on the bottom bun, then stack the cheese-topped patty and fried egg.
7
Plate
Close the burger with the top bun and serve immediately while the cheese is melted and the egg yolk is warm.
