Instructions
1
Prep
In a mixing bowl, combine ground beef, finely grated onion, finely chopped parsley, cumin, sumac, 1 minced garlic clove, 1/4 tsp salt and black pepper; mix by hand until evenly blended.
2
Chill
Cover and rest the mixture in the fridge for 15 minutes until it firms up and holds together.
3
Build
Shape the mixture into 2 short oval koftas around a flat skewer, pressing firmly so no cracks show.
4
Grill
Place koftas, tomato halves and pepper pieces on a hot grill pan brushed with half the olive oil. Grill 3–4 minutes per side until deep brown marks form and centre reaches 160°F.
5
Finish
Melt butter into warm rice over low heat, stirring until glossy. Whisk yogurt, grated garlic, remaining salt, lemon juice and remaining oil until smooth.
6
Plate
Spoon buttered rice into a bowl, top with koftas, charred tomato and pepper, drizzle with garlic yogurt sauce, scatter chili flakes and serve with lemon wedge.
