Grilled Liver Skewers
Beef liver cubes marinated in olive oil, sumac and grated onion, then skewered and grilled over high heat until browned outside and just pink within. Served with grilled flatbread, sumac-dressed onions, and lemon, this is a smoky, iron-rich Turkish dish.
