Grilled Lamb Steak with Herbs (Gluten-Free)

A single lamb leg steak is seasoned with garlic, rosemary and thyme, seared hot then finished on a griddle to medium-rare, and rested before slicing. Served with a squeeze of lemon and a simple arugula salad, this French bistro-style plate leans on herb and olive oil flavour rather than any sauce, and is entirely gluten-free.
