Instructions
1
Prep
Whisk 1/4 cup yogurt, minced garlic, smoked paprika, cumin and 1 tsp lemon juice together; coat lamb cubes evenly in this marinade.
2
Marinate
Cover and chill for 30 minutes until the yogurt tenderizes the meat and spices infuse.
3
Grill
Thread marinated lamb onto a metal skewer over medium-high heat for 8–10 minutes, turning every 2 minutes until charred and just firm inside.
4
Rest
Slide lamb from skewer onto a plate and rest for 3 minutes so juices redistribute into the meat.
5
Finish
Stir the remaining yogurt, remaining lemon juice, grated garlic, chopped parsley, salt and pepper into a pourable sauce.
6
Build
Lay flatbread flat, scatter cabbage down the centre, layer cucumber and tomato slices, then top with lamb.
7
Wrap
Drizzle sauce over lamb, fold the sides in and roll tightly, tucking the bottom edge under to prevent spillage.
8
Plate
Cut the wrap in half diagonally and serve cut-side up.
