Grilled Chicken Wings with Spice Rub
Chicken wings coated in a Chinese five-spice and white pepper rub, grilled over direct heat until the skin blisters and lacquers. Finished with a hoisin-soy glaze, they carry sweet, savoury, and mildly numbing notes from Sichuan peppercorn, served hot with scallion.
