Grilled Chicken Gizzards
Chicken gizzards marinated in soy sauce, Shaoxing wine, ginger and garlic, then skewered and grilled over high heat until charred at the edges and firm-chewy inside. Finished with a scallion-sesame oil brush and a dusting of white pepper, served as a smoky Chinese street-food snack.

Instructions
1
Prep
Trim excess fat and connective tissue from the chicken gizzards, then score each lightly with a paring knife. Mince the garlic, grate the ginger, and finely slice the scallion.
2
Marinate
Combine the gizzards with soy sauce, Shaoxing wine, ginger, garlic, half the scallion, sesame oil, white pepper, salt and sugar in a bowl and toss to coat.
3
Chill
Cover and refrigerate the bowl for 30 minutes.
4
Thread
Skewer the marinated gizzards on a metal or soaked bamboo skewer, leaving small gaps between pieces.
5
Grill
Brush grill grates with vegetable oil and grill the skewer over high heat, turning every 2 to 3 minutes for 10 to 12 minutes total until charred and firm but yielding.
6
Plate
Slide the gizzards off the skewer onto a plate and scatter with remaining scallion. Serve hot.
