Instructions
1
Prep
Rinse soaked azuki beans in a sieve under cold running water, drain well, discarding the soaking liquid.
2
Simmer
Place beans in a saucepan with 1 cup water over medium heat; simmer uncovered 30–35 minutes, topping up water as needed, until very soft.
3
Sweeten and cook
Stir in sugar and salt over low heat; simmer 5 minutes, mashing roughly half the beans until thickened to loose porridge consistency.
4
Mix and wrap
Whisk glutinous rice flour with 2 tbsp water until a smooth sticky dough forms; roll into 3–4 marble-sized balls.
5
Boil
Drop dumplings into boiling water over high heat; cook 2–3 minutes until they float and turn translucent.
6
Plate
Ladle warm bean soup into a bowl, top with drained dumplings, and serve immediately.
