Spicy Fried Potatoes (Gluten-Free)

Cubed potatoes are twice-fried until golden and crisp, then tossed in a smoked paprika and cayenne spiced tomato sauce with garlic and a drizzle of gluten-free mayonnaise. Served as a Spanish tapa, the dish is crunchy outside, tender inside, with a smoky, mildly spicy kick and vinegar brightness.

Instructions

1
Prep Peel the potato and cut into 2cm cubes, then pat dry with a towel so the surface fries crisp rather than steams.
2
Fry Heat 2 tablespoons of olive oil in a small skillet over medium heat for 8 minutes, turning potato cubes occasionally, until pale gold and just tender when pierced with a knife.
3
Rest Drain potatoes onto a paper towel-lined plate and let rest 2 minutes so excess oil drips off.
4
Crisp Return the skillet to medium-high heat and fry potatoes for 5 minutes, turning often, until deep golden brown and crackling crisp on the edges.
5
Sauce Heat the remaining 1 tablespoon olive oil over medium-low heat and sweat the garlic for 1 minute until softened. Stir in the smoked paprika, cayenne and chili powder and cook for 30 seconds until fragrant, then add the canned tomatoes, vinegar, salt and pepper. Simmer for 6 minutes until thickened to a coating consistency, then add the crisped potatoes and toss gently until coated. Spoon onto a tapas plate, drizzle with mayonnaise, scatter the fresh parsley on top and serve hot.
