Spicy Fried Chorizo in Wine

Fresh chorizo sausage fried in olive oil until the fat renders and edges crisp, then simmered briefly in red wine with garlic and bay leaf until the liquid reduces to a glossy sauce. Served hot with crusty bread for mopping, this Spanish tapa balances smoky heat against the wine's acidity.
