Instructions
1
Prep
Dice the onion, mince the garlic, chop the chipotle, and flake the smoked fish into bite-sized pieces, discarding any skin or bones.
2
Saute
Heat olive oil in a heavy saucepan over medium heat. Cook the onion and garlic for 3 minutes, stirring, until the onion softens and turns translucent.
3
Toast
Add the uncooked rice to the saucepan and stir over medium heat for 2 minutes until the grains turn opaque and pick up a light golden color.
4
Bloom
Stir the chipotle, smoked paprika, and cumin into the rice over medium heat for 30 seconds until the raw smell fades and the mixture smells deeply smoky.
5
Simmer
Pour in the chicken stock and crushed tomato, bring to a boil over high heat, then cover and reduce to low, simmering for 18 minutes until the rice is tender.
6
Rest
Remove the pan from the heat and let the rice sit covered for 5 minutes so the grains finish steaming and separate easily.
7
Fold
Gently fold the flaked smoked fish and half the scallion into the rice with a fork, warming through for 1 minute over low heat.
8
Plate
Spoon the rice and fish onto a plate, squeeze the lime juice over, and scatter the remaining scallion and cilantro to finish.
