Instructions
1
Prep
Pat chicken thighs dry, then thinly slice the onion, mince the garlic, finely chop the preserved lemon rind, and roughly chop the cilantro.
2
Sear
Heat olive oil in a heavy pot over medium-high heat. Sear chicken skin-side down for 4–5 minutes until deep golden brown, then flip and sear 2 minutes; remove.
3
Sauté
Lower heat to medium, sauté sliced onion and garlic for 4–5 minutes until softened and translucent.
4
Bloom
Stir cumin, ginger, and turmeric into the onions, cook over medium heat 30 seconds until fragrant and spices coat evenly.
5
Simmer
Return chicken to pot with stock, saffron threads, and chopped preserved lemon. Cover and simmer over medium-low heat for 30–35 minutes until chicken is tender and pulls easily from bone.
6
Finish
Stir in green olives and simmer uncovered over low heat 5 minutes until broth is glossy and slightly thickened.
7
Plate
Spoon rice into a shallow bowl, ladle chicken and broth over top, and scatter cilantro over the dish.
