Pork Steak in Milk Sauce
Bone-in pork loin steak seared until browned, then simmered in a gently reduced whole-milk sauce with shallot, garlic, sage, and nutmeg. Pan drippings enrich the sauce as it thickens to coat the back of a spoon, yielding a mild, creamy finish served directly over the steak.
