Grilled Eggplant with Garlic Sauce (Gluten-Free)

Whole Chinese eggplant halves are grilled over direct flame until the skin blisters and the flesh turns silky, then finished with a garlicky, savory-sweet sauce built from tamari, black vinegar, and toasted sesame oil. Scallions and toasted sesame seeds finish the dish, served warm as a side or light main.

Instructions

1
Prep Halve the eggplant lengthwise and score the cut sides in a shallow crosshatch, then brush both sides with vegetable oil using a pastry brush or your hands.
2
Grill Place the eggplant cut-side down on a hot grill or grill pan over medium-high heat and cook 5 to 6 minutes until deep grill marks form and the flesh softens.
3
Grill Flip the eggplant skin-side down and grill 4 to 5 minutes more over medium-high heat until the skin blisters and blackens and the flesh is fully tender.
4
Simmer In a small saucepan, combine the minced garlic, tamari, rice vinegar, and sugar with 2 tablespoons water and bring to a simmer over medium heat for 1 minute.
5
Reduce Stir the cornstarch slurry into the saucepan and simmer over medium-low heat for 30 to 45 seconds, stirring constantly, until the sauce thickens enough to coat a spoon.
6
Finish Remove from heat and stir in the sesame oil, then thinly slice the scallion and toast the sesame seeds.
7
Plate Transfer the grilled eggplant to a plate, spoon the garlic sauce over the top, and scatter with sliced scallion and toasted sesame seeds.
