Fried Whole Sardines
Small whole sardines are gutted, seasoned with salt and lemon, dusted in flour and fried whole in hot oil until the skin turns deep golden and crackling-crisp. Served with lemon wedges, fresh parsley, and thinly sliced red onion tossed with sumac, in the Turkish tradition of fried fish stalls.

Instructions
1
Prep
Rinse cleaned sardines under cold water, pat dry with paper towel, and season both sides with salt and black pepper.
2
Dredge
Spread flour on a plate and roll each sardine through it, shaking off excess so only a thin coat clings.
3
Fry
Heat olive oil in a wide skillet over medium-high heat until shimmering. Lay sardines in without crowding; fry 2–3 minutes per side until skin is deep golden and crisp.
4
Plate
Toss sliced red onion with sumac and lemon juice until pale pink. Arrange sardines on plate, scatter parsley and sumac onion over top, and serve with lemon wedges.
