Instructions
1
Prep
Dissolve the sugar into boiling water in a small bowl and set aside to cool for 5 minutes.
2
Knead
Gradually pour the sugar water into the glutinous rice flour and knead by hand until a smooth, pliable dough forms, about 3 minutes.
3
Rest
Cover the dough with a damp cloth and let it rest at room temperature for 15 minutes until silky.
4
Wrap & Build
Divide dough into 2 pieces, flatten each, place half the red bean paste in the centre of each, seal into smooth balls, roll lightly in water, then roll in sesame seeds pressed gently to coat evenly.
5
Fry
Heat vegetable oil to 275°F in a small pot over medium-low heat, lower balls in gently, fry 8 minutes spooning oil over tops until they float and turn pale gold.
6
Fry
Raise heat to medium and fry 3–4 minutes, turning frequently, until balls triple in size, turn deep golden brown, and feel crisp when tapped.
7
Plate
Lift balls out with a slotted spoon, drain on a wire rack for 1 minute, transfer to a plate, and serve warm.
