French Onion Soup (Gluten-Free)

Caramelized onions simmered in beef stock with dry sherry, finished under a broiled gluten-free baguette slice and melted Gruyere. Thickened with cornstarch instead of wheat flour, the soup preserves the classic French bistro flavors of slow-cooked onions, thyme and bay leaf.

Instructions

1
Prep Peel and thinly slice the onion into half-moons and mince the garlic on a cutting board; measure out the stock and sherry.
2
Sweat Melt the butter with olive oil in a small heavy pot over medium-low heat, add the onion and salt, and cook 10 minutes stirring occasionally until translucent.
3
Caramelize Continue cooking the onion over low heat for 30 minutes, stirring every few minutes and scraping the base, until it reaches deep mahogany-brown.
4
Deglaze Pour the sherry into the pot and scrape up any browned bits, letting it bubble over medium heat for 1 minute until nearly absorbed.
5
Simmer Add the garlic, beef stock, thyme and bay leaf to the pot, bring to a gentle boil over medium heat, then reduce to low and simmer uncovered for 10 minutes; discard the bay leaf.
6
Thicken Stir the cornstarch slurry into the simmering soup and cook 1 minute over medium heat, stirring constantly, until the broth turns glossy and coats the back of a spoon.
7
Toast Place the gluten-free baguette slice on a small baking sheet and toast under the broiler on high for 1 to 2 minutes per side until golden and crisp.
8
Broil Ladle the soup into an oven-safe crock, float the toasted baguette on top, scatter over the grated Gruyere, and broil on high for 2 to 3 minutes until fully melted and browned.
9
Plate Set the crock on a small plate or trivet, season with black pepper, and serve immediately while the cheese is bubbling.
