Instructions
1
Prep
Cut chicken thigh and pork shoulder into bite-sized chunks. Dice the onion and carrot; mince the garlic clove.
2
Sear
Heat olive oil in a heavy pot over medium-high heat. Brown chicken and pork for 4 minutes until golden, working in batches.
3
Sweat
Add onion, carrot and garlic to the pot. Cook over medium heat for 5 minutes until the onion softens and turns translucent.
4
Simmer
Pour in chicken stock and canned tomatoes, add bay leaf, smoked paprika and cayenne. Simmer over medium-low heat for 60 minutes until meat shreds easily.
5
Reduce
Stir in corn, butter beans and okra. Simmer uncovered over low heat for 20 minutes until broth visibly thickens and coats a spoon.
6
Finish
Remove bay leaf, stir in Worcestershire sauce, apple cider vinegar and brown sugar. Season with salt and black pepper to taste.
7
Plate
Ladle the stew into a bowl and serve hot.
