Garlic Pepper Fried Chicken (High-Protein)

Bite-sized chicken thigh pieces cornstarch-dredged and double-fried until shatter-crisp, then tossed with smashed garlic and cracked black pepper. A jammy soft-boiled egg and steamed edamame lift the protein well past a standard Thai fried chicken plate. Served with lime wedges and cucumber slices.

Instructions

1
Prep Toss the chicken thigh pieces in a bowl with the soy sauce and half the fish sauce; let sit at room temperature 10 minutes while the oil heats to 325°F (163°C).
2
Fry Heat the vegetable oil in a small saucepan or wok over medium-high heat. Fry the chicken in one batch for 4 minutes until pale gold and just cooked through.
3
Fry Raise the oil to 375°F (190°C) and fry a second time for 2 minutes until deep golden and audibly crisp when tapped; skip this step and the crust stays soft.
4
Saute In a clean skillet, fry the smashed garlic in 1 tablespoon of the frying oil over medium-low heat for 2 minutes until light golden and fragrant but not browned.
5
Toss Add the fried chicken, remaining fish sauce, sugar, and cracked black pepper to the skillet; toss over medium heat for 1 minute until glazed.
6
Plate Pile the garlic pepper chicken onto a plate, halve the soft-boiled egg on top, scatter the edamame and cilantro alongside, arrange the cucumber slices, and add the lime wedge.
