Fried Salt Cod Fritters
Salt cod is soaked, flaked, and folded into a garlic-and-parsley batter with mashed potato and egg, then deep-fried until the exterior turns deep golden and shatteringly crisp while the inside stays soft and briny. Served hot with lemon wedges and garlic aioli.

Instructions
1
Prep
Drain and rinse soaked salt cod. Poach in fresh water over medium heat for 10 minutes until flaking easily; cool and flake into small pieces, checking for bones.
2
Build
Combine flaked cod, mashed potato, egg, flour, garlic, parsley, and black pepper in a bowl; mix until the mixture holds together with no dry streaks.
3
Fry
Heat vegetable oil in a small skillet to 350°F (175°C). Drop tablespoon-sized portions into oil and fry 3–4 minutes per side until deep golden brown and crisp.
4
Drain
Lift fritters onto a paper-towel-lined plate with a slotted spoon; rest 2 minutes to drain excess oil and set the crust.
5
Plate
Arrange fritters with lemon wedge and mayonnaise alongside for dipping.
