Instructions
1
Prep
Cook the onion in a teaspoon of avocado oil over medium heat for 3 minutes until soft, then add ground beef, cumin, cinnamon, allspice, salt and pepper, cooking 5 minutes until no pink remains.
2
Off the heat, stir pine nuts and tomato paste into the beef and cool for 10 minutes.
3
In a bowl, whisk the egg, then work in almond flour and tapioca starch with a fork until a soft dough forms that holds together.
4
Cover the dough and refrigerate for 20 minutes until firm enough to roll without tearing.
5
Divide the dough into 2 pieces, press each into a 4-inch round between parchment, spoon half the beef filling onto one side, fold over and pinch edges to seal.
6
Heat the remaining avocado oil in a skillet over medium heat until it shimmers, then fry the pastries 3 to 4 minutes per side until deep golden and firm.
7
In a small bowl, whisk the yogurt, garlic and lemon juice together until smooth.
8
Plate
Set the pastries on a plate, scatter with parsley, and serve warm with the yogurt dip.
