Instructions
1
In a bowl, whisk together the all-purpose flour, semolina, yeast, sugar and salt.
2
Pour in the warm water and mix with your hands until a soft, slightly sticky dough forms; knead for 3-4 minutes until smooth.
3
Cover the bowl with a damp cloth and let the dough rest in a warm spot for 45 minutes, or until roughly doubled.
4
Turn the dough out and press it into a greased 10x10cm square so it is an even 1.5cm thick slab.
5
Heat the vegetable oil in a small deep pot to 170°C, checking with a thermometer.
6
Carefully lower the pressed dough slab into the oil and fry for 2-3 minutes per side, until deep golden brown and cooked through.
7
Lift onto a wire rack set over paper towels to drain for 2 minutes.
8
While still warm, stir the lemon juice into the warmed honey and drizzle evenly over the fried slab.
9
Scatter the crushed pistachio over the top, then cut into 2 squares once the honey has soaked in slightly.
10
Serve warm or at room temperature.
