Instructions
1
Prep
In a mixing bowl, rub the cold butter into the flour and salt with your fingertips until it resembles coarse breadcrumbs, then stir in the warm water until a smooth dough forms.
2
Rest
Cover the dough and set it aside at room temperature for 20 minutes.
3
Sauté
Heat a small skillet over medium heat, add the onion and cook 4 to 5 minutes, stirring occasionally, until soft and translucent.
4
Sear
Add the ground beef, breaking it up with a spoon, and cook over medium-high heat 5 to 6 minutes until browned with no pink remaining.
5
Season
Stir in the sumac, allspice, cinnamon, parsley and lemon juice; cook 1 minute over medium heat until evenly coated, then remove to cool.
6
Build
Roll the dough on a floured surface to 1/8 inch thickness and cut into 3 to 4 rounds roughly 4 inches across.
7
Stuff
Spoon filling onto one half of each round, fold into a half-moon and press edges together, crimping with a fork to seal.
8
Fry
Heat the vegetable oil in a small skillet over medium heat until shimmering, then fry turnovers in batches 2 to 3 minutes per side until deep golden and crisp.
9
Drain
Lift the turnovers onto a paper towel-lined plate and let excess oil drain for 1 minute.
10
Plate
Arrange the turnovers on a plate and serve warm.
