Instructions
1
Prep
Pat the beef sirloin dry and rub with 1 tsp olive oil, then season all over with salt and black pepper. Let rest 10 minutes.
2
Roast
Place beef on a small roasting tray in a preheated 425°F (220°C) oven for 15–18 minutes until a probe reads 130°F (54°C) for medium-rare.
3
Rest
Transfer beef to a board, tent loosely with foil, and rest for 10 minutes until juices settle.
4
Roast
Toss carrot batons and green beans with 1 tsp olive oil on a second tray and roast alongside for 15 minutes until tender.
5
Sweat
Warm a small saucepan over medium heat, add thinly sliced shallot and minced garlic, and sweat 3 minutes until softened.
6
Deglaze
Pour in red wine, scrape browned bits, and simmer over medium-high heat for 3 minutes until reduced by half.
7
Simmer
Whisk tomato paste and flour into beef stock until smooth, add to saucepan, and simmer 5 minutes until sauce coats a spoon.
8
Plate
Slice beef thinly against the grain, arrange with roasted carrots and green beans, spoon sauce over the top, and finish with fresh thyme leaves.
