Cincinnati goetta
A skillet of pan-fried Cincinnati goetta, a pork and steel-cut oat loaf studded with onion and warm spice, sliced thick and crisped in butter until the crust shatters and the center stays soft. Served alongside fried eggs and toast, it draws on Cincinnati's German-immigrant tradition of stretching meat with grain.
