Prep
Dice the ham, pepper, and onion. Beat the eggs with black pepper. Grate the cheddar.

Saute
Divide ham, pepper, and onion between two pans (or cook in batches). Cook in half the butter over medium heat 4 minutes until softened and lightly coloured.

Pour half the beaten eggs over each filling with remaining butter divided between pans. Cook over medium-low heat 3–4 minutes until the base just sets.

Scatter cheddar over one half of each omelette. Fold each omelette over and cook over low heat 1 minute until the cheese melts.
